Avocado Pasta

Introduction

Avocado pasta is a delicious and healthy alternative to traditional creamy pasta sauces, made with avocado and lemon juice. While it has no dairy or meat in it, it tastes so creamy! The addition of chicken would increase the protein in this dish and make it super satisfying.

How much to make?

Serves 1. This recipe can be doubled if you want to make more and it can be served in individual bowls for a slightly fancier look. If you want to serve this for a group of people, double or triple the ingredients.

Did you know? The avocado is a fruit, but it’s more commonly eaten as a vegetable. Avocados are good sources of healthy fats, fiber, potassium and vitamin K.

Ingredients

  • 1 avocado
  • 1 lemon juiced
  • 1 tsp salt
  • 1 cup of cooked pasta of your choice, reserve the pasta water if you can

Method

  • In a food processor or blender, puree the avocado along with the lemon juice. Set aside. If you’re using pasta that needs more than 10 minutes to cook like rice or chickpea-based pasta, get the water boiling before moving on to the next step. Otherwise, move on to the next step.
  • Boil your pasta as instructed by its package and drain when ready (or boil water if you’re making your own​).
  • Add the avocado mix and pasta together. Run the pasta under cold water until it is cold, then mix in the two mixtures until they are well combined. If you want more sauce, add some pasta water (about ¼ cup at a time) until you have the consistency of a sauce. Season with salt and top with your favourite herbs or added cooked chicken breast for extra protein!
